This thesis explores the origins of random fluctuations in large physical systems, as well as the impact of these fluctuations (extreme events, abrupt transitions in the dynamics...).

From a theoretical perspective, it demonstrates how the tools of statistical physics can describe these fluctuations, by analyzing chaotic microscopic dynamics. Paradigmatic applications include a 2D turbulence model and the statistical theory of waves. The fluctuations may generate statistical correlations between distant spatial points, implying that a local perturbation can have large-scale effects.

Yet the rare events induced by the variability in complex systems have important impacts on real-world applications. For example, the weather variability can create imbalances between renewable production and electricity demand. Extreme events, be it short but intense or prolonged, have major consequences for the design of the electricity mix, highlighting the importance of accounting for extreme statistics.
