Many physicists are arguing about the true chemical configuration of water/oil interfaces. Besides, different chemistry groups likely compete on the possibility that hydrogen peroxide spontaneously forms in emulsions. None of these two communities really exchanges on the topic of physical chemistry at interfaces. There is room for future discoveries and applications. In this talk, I would like to show some examples of chemistry and physical chemistry that are done in complex colloidal media. From the superglue oligomerization to the well-known nanoprecipitation technique (Pastis or Ouzo effect), I will show how chemistry at interfaces can be done at (almost) the same time as emulsification. I will particularly develop  recent findings where we stipulate that carbonic acid, actually some bicarbonate derivatives, may explain the transient, very efficient stabilization of various 'soft matter' objects (bubbles, emulsions, nanoparticles).
